Ceylon, not cassia. Traditionally taken for warmth and steady energy. True Ceylon cinnamon, Cinnamomum verum, and verum means true. The soft inner bark is peeled by hand and the rough outer layer scraped away before drying and grinding, at 500mg a capsule. Most cinnamon in a British kitchen is cassia, and Ceylon is the variety people choose when cinnamon is taken every day. Ayurveda places it with the warming spices, gentler than ginger.
